Our caper leaves are a chef favourite, used as an edible garnish with seafood in salads or even on a platter.
We pick the leaves on the stem at the beginning of our season in early spring to ensure they’re tender with each stem containing about 10 leaves including the tips of the plant which also have the tiny capers. Each jar contains about 20 stems.
They have a mild caper flavour slightly herbaceous with a grassy note. When pickled the crystallization of the antioxidant bio-flavonoid rutin appears as speckles on the product.
